Cucumber Melon Cooler Smoothie
Ingredients
- 1 cup diced cucumber
- 1 cup diced honeydew melon
- 1/2 cup plain Greek yogurt
- 1/2 cup coconut water
- 1 tablespoon honey (adjust to taste)
- 1/2 teaspoon lime juice
- A handful of fresh mint leaves
- Ice cubes
Instructions
- Start by preparing the ingredients.
- Wash and dice the cucumber and honeydew melon.
- If you prefer a colder smoothie, you can freeze the diced melon ahead of time.
- In a blender, combine the diced cucumber, diced honeydew melon, Greek yogurt, coconut water, honey, lime juice, and a handful of fresh mint leaves
- Blend on high speed until the mixture is smooth and creamy.
- If the smoothie is too thick, you can add more coconut water or plain water to achieve your desired consistency.
- Taste the smoothie and adjust the sweetness by adding more honey if needed.
- Blend again to incorporate.
- Once the smoothie reaches your desired consistency and taste, add a few ice cubes to the blender and blend again until the ice is crushed and the smoothie is chilled.
- Pour the smoothie into glasses and garnish with additional mint leaves if desired.
