Cucumber Melon Cooler Smoothie

Ingredients
  

  • 1 cup diced cucumber
  • 1 cup diced honeydew melon
  • 1/2 cup plain Greek yogurt
  • 1/2 cup coconut water
  • 1 tablespoon honey (adjust to taste)
  • 1/2 teaspoon lime juice
  • A handful of fresh mint leaves
  • Ice cubes

Instructions
 

  • Start by preparing the ingredients.
  • Wash and dice the cucumber and honeydew melon.
  • If you prefer a colder smoothie, you can freeze the diced melon ahead of time.
  • In a blender, combine the diced cucumber, diced honeydew melon, Greek yogurt, coconut water, honey, lime juice, and a handful of fresh mint leaves
  • Blend on high speed until the mixture is smooth and creamy.
  • If the smoothie is too thick, you can add more coconut water or plain water to achieve your desired consistency.
  • Taste the smoothie and adjust the sweetness by adding more honey if needed.
  • Blend again to incorporate.
  • Once the smoothie reaches your desired consistency and taste, add a few ice cubes to the blender and blend again until the ice is crushed and the smoothie is chilled.
  • Pour the smoothie into glasses and garnish with additional mint leaves if desired.
