Preparation
Preheat your oven to 375°F (190°C).
While the oven is preheating, prepare the tofu. Drain the tofu and press it to remove excess moisture. You can use a tofu press or place the tofu between paper towels and place a heavy object on top for about 15-20 minutes.
Once the tofu is pressed, cut it into small cubes.
Marinating and Baking:
In a bowl, mix together the olive oil, soy sauce, chili powder, cumin, garlic powder, salt, and pepper.
Add the tofu cubes to the bowl and gently toss them in the marinade until evenly coated.
Arrange the marinated tofu cubes on a baking sheet lined with parchment paper or lightly greased.
Bake the tofu in the preheated oven for about 25-30 minutes, or until the tofu is golden brown and slightly crispy, flipping the cubes halfway through for even cooking.
Assembling Tacos:
Warm the taco-sized tortillas according to the package instructions.
Assemble the tacos by placing a few pieces of baked tofu on each tortilla.
Top with shredded lettuce, diced tomatoes, diced onions, avocado slices, salsa, chopped cilantro, and any other toppings you prefer.
Squeeze fresh lime juice over the tacos for extra flavor.
